Buying Guide · bakery depanner selection RFQ
Specify a Bakery Depanner for Your Product
Choose a depanner around the product and pan you actually run. In a request for quotation (RFQ), show suppliers how each baked item releases from its pan and where it must land next. A quoted line rate alone will not show whether the product can be lifted without damage.

Describe the product at the point of release
Send pan drawings and representative baked samples for every format in scope. Record product dimensions, weight range, shape and condition as it leaves the oven. Note whether it is loose, sticky or easily marked, and show the desired orientation on the cooling conveyor.
AMF lists vacuum, push, needle and tilting depanners for different bakery applications. Those are design options, not a recommendation for every product. Ask each bidder to explain how its proposed method releases your sample and what pan condition it assumes.
Show the whole handoff, including empty pans
Give the supplier the oven discharge height, pan pitch, available footprint and cooling-conveyor entry point. Mark how empty pans return, where an operator can inspect them and where rejected product goes. If the upstream oven pauses, ask what happens to pans already in the depanner.
Request a drawing that labels the supplied guards, product conveyor, pan discharge and controls interface. A depanner that releases the product well can still be the wrong purchase if its outfeed cannot fit the line or its pan route blocks cleaning access.
Agree a trial and acceptance record
Before ordering, agree which products and pans will be trialled, their starting condition and the visible defects to record. Ask the bidder to show the accepted range of pan formats, setup changes and line speeds. Keep samples or photographs and the approved drawing with the final quotation.
A trial on one bun does not establish performance for a soft loaf or a different pan coating. State which formats were not tested and who owns later changes. The AMF product-handling overview linked below describes the available depanning methods.
Frequently Asked Questions
Is vacuum depanning always gentler?
No. Suitability depends on the product, pan and release condition; request a representative trial.
What should be on the RFQ drawing?
Show oven discharge, pan formats, depanner footprint, product outfeed and empty-pan route.
Can one setup handle every product?
Ask for the documented format range and the adjustments or tooling each product needs.
