Buying Guide · bread moulder panner selection RFQ
Choose a Bread Moulder and Panner for Your Line
Select a bread moulder and panner against the loaves and pans you actually produce. The useful RFQ defines dough condition, target shape, pan placement and changeover evidence, rather than asking only for a maximum loaves-per-minute figure.

List the products and pans that drive the choice
Record dough-piece weight, intended loaf length, pan cavity dimensions, pan spacing and the number of lanes. Separate current products from future options. If seeded or topped products are planned, describe where that step occurs and how it affects handling before the pan.
AMF shows straightline sheeter, moulder and panner configurations alongside different moulding arrangements. These illustrate that the shaping and placement stages may be integrated, but the buyer still needs to confirm the exact offered scope.
Map shaping and placement as one sequence
Describe the input from the rounder or intermediate proofer and the required orientation at each transfer. Ask how the line centres dough, forms it and places it in the intended pan cavity. A good shape at the moulder outlet is not enough if pieces land unevenly in the pan.
Request a drawing with transfer heights, pan feed and return paths, operator stations and rejection or manual-recovery points. Show how the sequence reacts when pans are missing, a downstream conveyor stops or the line changes product.
Compare the changeover work
Ask which boards, guides, rollers or programme settings change between the quoted products and who may make those changes. Include the tools, access and cleaning steps in the comparison. An additional product format may require hardware that is absent from the base quotation.
Agree a representative trial using the buyer's dough and pans. Observe loaf dimensions, seam position, pan placement, surface damage and the first accepted pieces after a changeover. Record settings and rejects rather than relying on a short demonstration video.
Close the supply and acceptance scope
List included pan conveyors, guards, controls interfaces, tooling, spare parts and training. Confirm where the supplier's responsibility ends and which existing equipment must be modified. Ask for the model-specific cleaning and safe-access instructions before approving the layout.
Make acceptance criteria practical: a defined product range, agreed trial conditions, repeatable placement and a documented recovery from normal line stops. Leave untested products as explicit follow-up items instead of assuming they are covered.
Frequently Asked Questions
Does a moulder quotation include automatic panning?
Only if the written supply scope says so. Confirm the pan-feed and placement equipment separately.
What should a trial measure?
Check loaf shape, seam position, pan placement, rejects and changeover recovery on the buyer's products.
Can one setup cover several pan formats?
Possibly, but list each format and confirm the tooling and adjustment needed for it.
