Specify Ingredient Dosing at the Mixer Interface
Before buying automated ingredient dosing, specify exactly how measured ingredients will reach the mixer and how each batch will be confirmed. A dosing system can be accurate on its own yet still leave a manual transfer, recipe mismatch or unclear responsibility at the mixer.

Map every ingredient and handoff
List bulk flour, water, minor ingredients and any ingredients added by hand. For each, note storage, measurement method, delivery point and who releases it to a batch. Identify which ingredients must be traceable and where a manual check is required.
Ask suppliers to draw the boundary between storage, dosing, transfer, mixer controls and operator action. AMF describes automated ingredient scaling and dough control as separate parts of a wider mixing process. That is a useful integration question, not proof that any offered system includes both.
Define recipe and record ownership
State who creates and approves recipes, how a batch is identified and what happens if the measured amount is outside the agreed tolerance. Request a sample batch record showing actual additions, manual confirmations and alarms. Avoid assuming the mixer controller and dosing controller share data without a documented interface.
Provide the plant’s utility and cleaning constraints. Water temperature control, dust collection, allergen segregation and washdown requirements depend on the ingredients and installed equipment. Ask bidders to mark each connection and each exclusion.
Test the complete sequence
Agree a witnessed trial using representative recipes, including a planned manual addition and a controlled exception. Check that the correct ingredients reach the intended bowl, the record can be read by the production team and the operator can respond safely to a rejected batch.
Keep acceptance criteria tied to the agreed equipment and ingredients. Request the final interface list, training scope and support contact for faults between the dosing and mixer systems. A separate demonstration of two machines does not establish that their handoff works.
Frequently Asked Questions
Do I need to automate every ingredient?
No. State which additions remain manual and how they are recorded in the batch sequence.
Is a dosing accuracy claim enough?
No. Confirm the measurement method, recipe control, transfer path and accepted batch record for your application.
Who owns an interface fault?
Assign responsibility for controls, signals and support in the contract before installation.
