Buying Guide · commercial spiral mixer batch size RFQ

Size a Spiral Mixer Around Real Dough Batches

Choose a spiral mixer from the dough batches your bakery actually needs to make, including the smallest and busiest runs. A headline bowl capacity does not show whether one machine can mix each recipe and deliver dough to the next process on time.

Define a usable batch range

List dough weight, flour weight and recipe type for each product family. Separate the usual batch from the smallest practical run and the peak order. Ask the supplier for the approved operating range for the proposed model and tool, rather than assuming the rated bowl volume works for every dough.

AMF publishes different mixer families and batch ranges for specific models. Those examples show why a quotation needs the actual dough and batch schedule; their published capacities are not specifications for another supplier’s mixer.

Check the shift, not only one batch

Map ingredient charging, mixing, discharge, cleaning and bowl turnaround against the next machine’s demand. If the mixer makes one large batch but the divider waits during a long changeover, nominal capacity may overstate useful output. Include recipe changes and cleaning between incompatible products.

Ask how dough leaves the bowl and where it waits. A wheeled bowl, tilting bowl or separate transfer system changes floor space, handling and operator work. The quotation should identify the offered discharge method and its handoff height.

Make the offer comparable

Give every bidder the same recipe families, dough weights, target batches per shift, room dimensions and available utilities. Request the model-specific minimum and maximum batch guidance, bowl and tool details, mixing controls, discharge arrangement, guarding and cleaning instructions.

Agree a product trial or documented demonstration where the dough is sensitive to mixing or discharge. Define how the buyer will judge dough condition and cycle timing before the test. Do not treat a brochure rating as a guarantee of your recipe result.

Frequently Asked Questions

Can I size a mixer by flour weight alone?

No. Provide flour and total dough weights with the recipe family, because water and other ingredients change the load.

Should the smallest batch be in the RFQ?

Yes. It can determine whether a large mixer handles short runs or whether a separate machine is needed.

What should a supplier confirm before ordering?

Confirm the model’s approved batch range, tool, bowl handling, utilities and proposed trial scope.
